Ingredients

  • 2 lbs ripe tomatoes, quartered
  • 1 medium cucumber, peeled and chunked
  • 1 medium red bell pepper, seeded and chopped
  • 2 tbsp red wine vinegar
  • 3 tbsp olive oil
  • 1 to taste salt and black pepper

Instructions

    Add tomatoes, cucumber, bell pepper, vinegar, and olive oil to a blender.

    Blend until mostly smooth with small chunks still visible, about 45 seconds.

    Season with salt and pepper to taste, stirring well to combine.

    Transfer to a bowl and refrigerate until chilled, at least 1 hour or overnight.

    Stir well before serving. Adjust seasoning if needed and serve cold.
