Ingredients

  • 2 large eggs
  • ⅓ cup whole milk
  • 1 tablespoon granulated sugar
  • ½ teaspoon vanilla extract
  • 4 slices brioche, sliced
  • 1.5 tablespoon butter

    Crack the 2 eggs into a shallow bowl (like a cereal bowl). Pour in 0.33 cup milk, 1 tablespoon sugar, and 0.5 teaspoon vanilla extract.

    Whisk the egg mixture with a fork for about 20 seconds until the color is uniform and no streaks of white remain.

    Place a 10-inch skillet over medium heat and add 1.5 tablespoons butter. Wait about 60 seconds until the butter melts completely and smells nutty.

    Pick up one brioche slice with your fingers, dip it into the egg mixture for 1 full second on each side (do not soak), and place it in the hot skillet.

    Repeat with the remaining 3 brioche slices, placing them in the skillet so they do not touch each other.

    Cook for 2 to 3 minutes until the bottom of each slice turns golden brown (the color of caramel candy) and the edges look darker and crispy.

    Using a thin metal spatula, slide it under each slice and flip it over in one quick motion.

    Cook the second side for 1 to 2 minutes until it also turns golden brown and feels slightly firm when you press the center with your finger.

    Transfer the 4 slices to a serving plate. Top with fresh berries, maple syrup, powdered sugar, or whipped cream as desired.
