Ingredients
- ½ loaf brioche loaf
- 3 large eggs
- ½ cup whole milk
- 1 tsp vanilla extract
- 2 medium bananas
- 2 tbsp brown sugar
- 2 tbsp powdered sugar
- 3 tbsp butter

Whisk eggs, milk, vanilla, a pinch of salt, and a dash of cinnamon in a shallow bowl until pale and well combined.

Slice brioche into 1-inch-thick slices. Dunk each slice into the egg mixture, coating both sides for 2 seconds per side.

Heat 1.5 tbsp butter in a large skillet over medium-high until foaming, about 90 seconds.

Sear soaked brioche 3 minutes per side without moving until golden brown and center stays just set but soft.

Slice bananas 1/4-inch thick. Melt remaining 1.5 tbsp butter in the skillet, add bananas and brown sugar, toss for 2 minutes until caramelized.

Top toast with caramelized bananas and drizzle with any pan syrup. Dust with powdered sugar and serve immediately.
