Ingredients

  • ½ cup butter
  • ½ cup granulated sugar
  • 8 medium apples (Granny Smith or Honeycrisp), peeled and halved
  • 1 tsp vanilla extract
  • 1 sheet (9 × 9 inch or similar) puff pastry, thawed if frozen
  • ¼ tsp salt

Instructions

    Preheat oven to 400°F. Pat apple halves dry with paper towels.

    In a 10-inch cast iron skillet, melt butter over medium-high heat, ~2 minutes.

    Add sugar and salt, stirring often, until caramel is amber and fragrant, ~4 minutes.

    Remove from heat. Arrange apple halves cut-side down in a tight spiral, fitting them snugly.

    Return to medium heat and cook apples without moving until caramel darkens, ~5 minutes.

    Drizzle vanilla extract over apples. Remove from heat and cool 2 minutes.

    Lay puff pastry over apples, tucking edges down inside the skillet rim.

    Bake until pastry is puffed and golden brown, 18–22 minutes.

    Cool 5 minutes. Run a thin knife around the edge, then invert onto a serving plate in one quick motion.
