Ingredients
- ½ cup butter
- ½ cup granulated sugar
- 8 medium apples (Granny Smith or Honeycrisp), peeled and halved
- 1 tsp vanilla extract
- 1 sheet (9 × 9 inch or similar) puff pastry, thawed if frozen
- ¼ tsp salt
Instructions
- 1
Preheat oven to 400°F. Pat apple halves dry with paper towels.
- 2
In a 10-inch cast iron skillet, melt butter over medium-high heat, ~2 minutes.
- 3
Add sugar and salt, stirring often, until caramel is amber and fragrant, ~4 minutes.
- 4
Remove from heat. Arrange apple halves cut-side down in a tight spiral, fitting them snugly.
- 5
Return to medium heat and cook apples without moving until caramel darkens, ~5 minutes.
- 6
Drizzle vanilla extract over apples. Remove from heat and cool 2 minutes.
- 7
Lay puff pastry over apples, tucking edges down inside the skillet rim.
- 8
Bake until pastry is puffed and golden brown, 18–22 minutes.
- 9
Cool 5 minutes. Run a thin knife around the edge, then invert onto a serving plate in one quick motion.
- 10
Serve warm or at room temperature, ideally with crème fraîche or vanilla ice cream.
