Ingredients
- 2 medium beets
- 2 large orange
- 4 cups lettuce
- ¼ cup parsley
- 3 tbsp olive oil
- 2 tbsp orange juice
- ½ tsp salt
- ½ tsp black pepper

Preheat oven to 400°F. Wrap the 2 beets in foil and roast until fork-tender, about 45 minutes. Let cool, then peel and slice into thin rounds.

While beets roast, segment the 2 oranges: cut off the peel and pith, then slice into rounds. Set aside.

In a small bowl, whisk together the 3 tbsp olive oil, 2 tbsp orange juice, 0.5 tsp salt, and 0.5 tsp black pepper to make the dressing.

In a large bowl, toss the 4 cups lettuce with half the dressing until lightly coated. Arrange on a platter.

Top the lettuce with the roasted beet slices and orange rounds. Drizzle with remaining dressing and sprinkle with 0.25 cup chopped parsley. Serve immediately.
