Ingredients

  • 1 cup water
  • 2 tbsp butter
  • 1 cup all-purpose flour
  • 2 large eggs
  • 2 cups vegetable oil
  • ½ cup sugar
  • 1 tsp ground cinnamon
  • 4 oz dark chocolate

Instructions

  1. 1

In a medium saucepan, combine 1 cup water and 2 tbsp butter. Bring to a boil over high heat, then reduce to low and add 1 cup flour. Stir vigorously until the mixture forms a smooth ball, about 1 minute.

  2. 2

Remove the pan from heat and let cool for 2 minutes. Beat in 2 eggs one at a time, stirring until fully incorporated and the dough is glossy.

  3. 3

Heat 2 cups vegetable oil in a deep skillet or pot to 350°F (175°C). Meanwhile, fit a piping bag with a star tip and fill with the dough.

  4. 4

Pipe 4-inch strips of dough directly into the hot oil, cutting with scissors. Fry in batches, turning occasionally, until golden brown and crisp, about 2-3 minutes per batch.

  5. 5

Drain churros on paper towels. In a shallow dish, mix 1/2 cup sugar with 1 tsp cinnamon. Roll the warm churros in the cinnamon sugar until coated.

  6. 6

Melt 4 oz dark chocolate in a microwave or double boiler. Serve the churros warm with the chocolate sauce for dipping.

  7. 7

Optional: add a pinch of salt or a splash of vanilla to the chocolate for extra flavor.
