Ingredients
- 2 cups sushi rice
- 4 sheets nori sheets
- 3 large eggs
- 4 slices ham slices
- 3 tbsp soy sauce
- 2 tbsp rice vinegar

Cook 2 cups sushi rice according to package; while warm, stir in 2 tbsp rice vinegar and a pinch of salt. Let cool slightly.

Beat 3 eggs with a pinch of salt; cook in a lightly oiled pan over medium until just set, about 2 minutes per side. Slice into strips.

Lay 1 nori sheet on a bamboo mat; spread 1/2 cup rice evenly, leaving a 1-inch border. Place 1 ham slice and egg strips along the center.

Roll tightly, wetting the edge to seal. Repeat with remaining ingredients. Slice each roll into 1-inch pieces.
