Ingredients

  • 1 lb beef chuck
  • 2 medium potatoes
  • 1 can (15 oz) canned white beans
  • 2 large eggs
  • 1 large onion
  • 1 tsp paprika

Instructions

    Cut the 1 lb beef chuck into 1-inch cubes and season with salt and pepper. Heat 1 tbsp oil in a large pot over medium-high and brown the beef on all sides, about 5 minutes.

    Add the 1 sliced onion and 1 tsp paprika, cook until the onion is soft and golden, about 5 minutes.

    Add the 2 diced potatoes, the drained beans, and 2 cups water. Bring to a boil, then reduce to low, cover, and simmer for 15 minutes.

    Gently place the 2 eggs on top of the stew, cover, and cook for 10 more minutes until the eggs are set and the potatoes are tender when pierced with a fork.

    Serve hot, with the eggs halved on top.
