Ingredients
- 2 large choux pastry shells
- 4 oz dark chocolate
- 1 cup heavy cream
- 1 cup powdered sugar
- 2 tbsp cocoa powder
- 1 tsp vanilla extract

In a small saucepan, heat 1 cup heavy cream and 4 oz dark chocolate over medium, stirring until smooth and glossy, about 5 minutes. Remove from heat and let cool slightly.

In a bowl, whisk 1 cup powdered sugar and 2 tbsp cocoa powder. Gradually add the chocolate-cream mixture and 1 tsp vanilla, whisking until thick and spreadable, about 2 minutes.

Slice the 2 choux shells horizontally. Spread a generous layer of the chocolate cream on the bottom half, then replace the top.

Frost the top of each pastry with the remaining chocolate cream, smoothing with a spatula. Chill for 10 minutes to set before serving.
