Ingredients
- 1 lb beef sirloin or chuck, sliced thin
- 2 peppers canned chipotle peppers in adobo sauce
- 1.5 cups masa harina (corn flour for tortillas)
- ½ medium red onion, thinly sliced
- 1 whole lime (juiced)
- ¼ cup crema or sour cream

Mix masa harina with 1 cup warm water and a pinch of salt until it forms a soft, Play-Doh-like dough.

Divide dough into 6 portions. Press each between plastic wrap into a thin disc, then pinch edges up to form a shallow cup.

Heat oil in a skillet over medium-high. Fry each masa cup until golden and crispy, 2–3 minutes per side. Drain on paper towels.

In the same skillet, brown beef over high heat, breaking it apart with a spoon, 4–5 minutes. Chop chipotles, add to beef with 2 tbsp adobo sauce, and stir 30 seconds.
