Ingredients

  • 1 lb beef sirloin, thinly sliced
  • 14 oz firm tofu, cubed
  • 4 cups chicken broth
  • 2 inch ginger, sliced
  • 2 cloves garlic, minced
  • 2 cups shredded cheddar cheese
  • 2 tbsp cornstarch
  • 1 cup milk

Instructions

    In a fondue pot or large saucepan, combine the 4 cups chicken broth, 2-inch sliced ginger, and 2 minced garlic cloves. Bring to a simmer over medium-high heat, then reduce to low to keep hot.

    In a separate saucepan, whisk together the 2 tbsp cornstarch and 1 cup milk until smooth. Place over medium heat and stir constantly until thickened, about 5 minutes.

    Reduce heat to low and gradually add the 2 cups shredded cheddar cheese, stirring until melted and smooth. Keep warm.

    Arrange the 1 lb beef slices and 14 oz tofu cubes on a platter. Using fondue forks, cook the beef in the simmering broth for 1-2 minutes until browned, and the tofu for 2-3 minutes until heated through.

    Dip the cooked beef and tofu into the cheese sauce and enjoy. If the sauce thickens too much, stir in a splash of hot broth to thin it.
