Chinese Cashew Chicken

Ingredients
- 1 lb chicken breast
- 1 cup cashews
- 2 cups purple cabbage
- 1 medium cucumber
- 2 medium kiwi
- 1 medium onion
- 3 cloves garlic
- ½ cup sweet and sour sauce

Slice the 1 lb chicken breast into bite-sized pieces and season with salt and pepper. Set aside.

Thinly slice the 1 onion and 3 garlic cloves. Shred the 2 cups purple cabbage, slice the 1 cucumber into rounds, and peel and slice the 2 kiwis.

Heat 2 tbsp oil in a wok or large skillet over high heat. Add the chicken and stir-fry until golden and cooked through, about 5-7 minutes. Remove and set aside.

In the same pan, add the onion and garlic. Stir-fry until fragrant and softened, about 2 minutes.

Return the chicken to the pan. Add the 1 cup cashews and 1/2 cup sweet and sour sauce. Stir-fry for 2-3 minutes until everything is coated and heated through.

Arrange the cabbage, cucumber, and kiwi on a serving platter. Spoon the hot chicken mixture over the top and serve immediately.
