Ingredients

  • 3 tbsp red wine vinegar
  • 2 tbsp ají amarillo paste (or 2 tsp hot paprika + 1 tsp turmeric)
  • 1 tsp cumin
  • 1 whole lime
  • 1.5 lb beef heart, cleaned and cubed
  • 2 tbsp olive oil
  • ¼ cup fresh cilantro (chopped)

Instructions

    Whisk vinegar, ají amarillo paste, cumin, and juice of the lime in a bowl.

    Toss beef heart cubes with the marinade, coating evenly. Let sit 5 minutes.

    Thread beef onto skewers, leaving a small gap between pieces.

    Heat oil in a large skillet over medium-high heat until shimmering, about 90 seconds.

    Sear skewers 2 minutes per side without moving. Edges should char; center stays pink.

    Slide onto a plate and scatter cilantro over top. Serve immediately.
