Ingredients

  • 1 lb chicken breast
  • 1 medium bitter melon
  • 8 oz mushrooms
  • 3 cloves garlic
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil

Instructions

  1. 1

Slice the 1 lb chicken breast into thin strips. Cut the 1 bitter melon in half lengthwise, scoop out the seeds, and slice into 1/4-inch half-moons. Slice the 8 oz mushrooms and mince the 3 garlic cloves.

  2. 2

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the chicken strips and cook until golden and cooked through, about 5-6 minutes. Remove chicken to a plate.

  3. 3

In the same skillet, add the bitter melon, mushrooms, and garlic. Stir-fry until the vegetables are tender and the melon starts to soften, about 5 minutes.

  4. 4

Return the chicken to the skillet. Add 2 tbsp soy sauce and stir everything together. Cook for 1-2 minutes until the sauce coats the chicken and vegetables. Serve hot, garnished with cilantro if desired.
