- 1 lb chicken breast
- 1 medium bitter melon
- 8 oz mushrooms
- 3 cloves garlic
- 2 tbsp soy sauce
- 2 tbsp vegetable oil

Slice the 1 lb chicken breast into thin strips. Cut the 1 bitter melon in half lengthwise, scoop out the seeds, and slice into 1/4-inch half-moons. Slice the 8 oz mushrooms and mince the 3 garlic cloves.

Heat 2 tbsp vegetable oil in a large skillet over medium-high heat. Add the chicken strips and cook until golden and cooked through, about 5-6 minutes. Remove chicken to a plate.

In the same skillet, add the bitter melon, mushrooms, and garlic. Stir-fry until the vegetables are tender and the melon starts to soften, about 5 minutes.
