Ingredients
- 1 lb chicken breast
- 1 red bell pepper
- 1 zucchini
- 1 onion
- ½ cup sweet and sour sauce
- 2 tbsp vegetable oil

Cut the 1 lb chicken breast into bite-sized pieces and season with salt and pepper. Heat 1 tbsp of the vegetable oil in a large skillet over medium-high heat.

Add the chicken in a single layer and cook until golden and cooked through, about 6-8 minutes, turning occasionally. Remove from the skillet and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the 1 sliced onion, 1 sliced red bell pepper, and 1 sliced zucchini. Stir-fry until crisp-tender, about 4-5 minutes.

Return the chicken to the skillet. Pour in the 1/2 cup sweet and sour sauce and stir to coat everything. Cook until the sauce is bubbling and slightly thickened, about 2 minutes.
