- 1.5 lb chicken breast
- ½ cup peanut butter
- 3 tbsp soy sauce
- 2 whole lime
- 2 tbsp brown sugar
- 1 whole cucumber
- ¼ cup rice vinegar
- 8 whole skewers

Soak 8 wooden skewers in water for 20 minutes. Meanwhile, slice 1 cucumber into thin rounds and place in a bowl with 1/4 cup rice vinegar and 1 tbsp brown sugar. Set aside to pickle.

Cut 1.5 lb chicken breast into 1-inch chunks. In a bowl, mix 2 tbsp soy sauce, juice of 1 lime, and 1 tbsp brown sugar. Toss chicken in marinade and thread onto skewers.

In a small saucepan, combine 1/2 cup peanut butter, 1/4 cup water, 1 tbsp soy sauce, juice of 1 lime, and 1 tbsp brown sugar. Warm over low heat, stirring until smooth and pourable, about 3 minutes.

Heat a grill pan or outdoor grill over medium-high. Cook skewers for 4-5 minutes per side, until chicken is golden and cooked through (no pink inside).

Serve skewers with peanut sauce and pickled cucumbers on the side. Sprinkle with crushed peanuts if you have them.
