Ingredients
- 1 whole (about 3 lbs) rotisserie chicken, shredded
- 3 medium carrots, sliced into thin rounds
- 2 stalks celery stalks, sliced 1/4-inch thick
- 6 cups chicken broth
- 2 tbsp fresh dill (or parsley), chopped
- 1 whole bay leaf

Pour broth into a large pot. Add carrots, celery, and bay leaf. Bring to a boil over high heat.

Reduce heat to medium-low. Simmer for 8 minutes until carrots are tender but still hold their shape.

Add shredded chicken and stir until warmed through, about 2 minutes.

Taste and season with salt and pepper. Discard bay leaf.
