Ingredients
- 1 lb chicken breast
- 1 cup gram flour (besan)
- 1 medium onion
- ½ cup fresh cilantro
- 1 tsp garam masala
- 1 tsp salt
- ¾ cup water
- 2 cup oil for frying

Dice the 1 lb chicken breast into small bite-sized pieces and finely chop the 1 medium onion and 0.5 cup cilantro.

In a large bowl, combine the chicken, onion, cilantro, 1 cup gram flour, 1 tsp garam masala, and 1 tsp salt. Mix well.

Gradually add 0.75 cup water, stirring until a thick, sticky batter forms that coats the chicken. Let rest for 5 minutes.

Heat 2 cups oil in a deep pan over medium-high until a drop of batter sizzles and floats, about 350°F.

Drop spoonfuls of the batter into the hot oil, frying in batches without crowding. Cook until golden brown and crispy, about 5-6 minutes per batch.
