Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups cooked rice (white or brown)
  • ½ cup plain Greek yogurt
  • 1 medium cucumber
  • 1 medium Roma tomato
  • 1 whole lemon (juiced)
