Chicken Gomtang

Ingredients

  • 1 whole (about 3-4 lbs) whole chicken
  • 10 cups water
  • 6 cloves garlic cloves
  • 1 medium onion
  • 4 stalks green onions
  • 1 tsp salt
  • ½ tsp black pepper

Instructions

    Rinse the 1 whole chicken and place in a large pot. Add 10 cups water, 6 garlic cloves, and 1 onion (peeled and halved). Bring to a boil over high heat.

    Once boiling, reduce heat to low, cover, and simmer gently until the chicken is cooked through and tender, about 40 minutes. The meat should easily pull away from the bone.

    Carefully remove the chicken to a cutting board. Strain the broth through a fine-mesh sieve, discarding the solids. Skim off excess fat from the surface.

    When cool enough to handle, shred the chicken meat, discarding the skin and bones.

    Return the shredded chicken to the pot with the strained broth. Season with 1 tsp salt and 1/2 tsp black pepper. Simmer for 5 minutes to heat through.

    Slice 4 green onions thinly. Ladle the soup into bowls and garnish with the green onions. Serve hot.
