Ingredients

  • 12 oz rotisserie chicken, shredded or sliced
  • ½ cup hummus
  • ½ cup Greek yogurt tzatziki
  • ½ medium red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ medium cucumber, diced
  • 1 whole lemon

Instructions

    Heat 1 tbsp oil in a skillet over medium-high heat until shimmering, about 90 seconds.

    Add shredded chicken, 0.5 tsp cumin, 0.25 tsp paprika, salt, and pepper. Stir and cook 3 minutes until edges crisp.

    Arrange hummus on two plates. Top with warmed chicken, then tzatziki in a drizzle.

    Toss cherry tomatoes, cucumber, and red onion with a pinch of salt and juice of half the lemon.
