Ingredients

  • 4 slices dark rye bread
  • 2 tbsp butter
  • 4 large eggs
  • 4 oz smoked salmon
  • ½ whole cucumber
  • ¼ small red onion
  • 2 tbsp dill (fresh, chopped)
  • ½ whole lemon

Instructions

    Crack eggs into a bowl, whisk with a pinch of salt and pepper.

    Butter the rye bread slices on one side, then toast in a skillet over medium heat until golden, ~2 minutes per side.

    Slide toasts onto a plate. Add 1 tbsp butter to the skillet, pour in eggs, and cook without stirring until soft curds form, ~3 minutes.

    Slice cucumber into thin rounds, thinly slice red onion, and toss both with a squeeze of lemon juice.

    Divide warm eggs among toasts, top each with salmon, cucumber-onion pile, and a sprinkle of fresh dill.
