Ingredients
- 1 lb chicken breast
- 1 medium onion
- 1 cup all-purpose flour
- 1 cup milk
- 2 tbsp butter
- 2 large egg
- 1 cup breadcrumbs
- 2 cups vegetable oil

Boil the 1 lb chicken breast in salted water until cooked through, about 15 minutes. Shred and set aside.

In a pan, melt 2 tbsp butter over medium heat. Add 1 chopped onion and cook until soft, about 5 minutes.

Stir in 1 cup flour and cook for 1 minute. Gradually whisk in 1 cup milk, stirring until thick, about 3 minutes.

Mix in the shredded chicken. Season with salt and pepper. Let cool, then chill for 30 minutes.

Shape the mixture into 12 croquettes. Dip each in 2 beaten eggs, then coat with 1 cup breadcrumbs.

Heat 2 cups oil in a deep pot to 350°F. Fry croquettes in batches until golden brown, about 3-4 minutes per batch.
