Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1 tsp paprika
  • 2 cups waffle mix
  • 2 cups vegetable oil
  • ¼ cup maple syrup
  • 2 tbsp powdered sugar

Instructions

    In a bowl, combine the 1 lb chicken thighs and 1 cup buttermilk. Let soak for 15 minutes while you prepare the waffle batter.

    Prepare the 2 cups waffle mix according to package directions. Cook waffles in a preheated waffle iron until golden and crisp, about 4-5 minutes. Keep warm.

    In a shallow dish, mix 1 cup flour, 1 tsp paprika, and a pinch of salt and pepper. Dredge each chicken piece in the flour mixture, shaking off excess.

    Heat 2 cups vegetable oil in a deep skillet over medium-high until shimmering (350°F). Fry chicken in batches, without crowding, until golden and cooked through, about 6-8 minutes per side. Drain on paper towels.
