Ingredients
- 1 lb chicken breast
- 1 head broccoli
- 2 cups cooked rice
- 3 tbsp soy sauce
- 2 cloves garlic
- 2 tbsp vegetable oil
- 1 tbsp cornstarch

Cut the 1 lb chicken breast into bite-sized pieces and toss with the 1 tbsp cornstarch, 1 tbsp soy sauce, and a pinch of salt. Let marinate for 10 minutes.

Heat 1 tbsp vegetable oil in a large skillet or wok over high heat. Add the chicken in a single layer and cook until golden and cooked through, about 5-7 minutes. Remove and set aside.

Add the remaining 1 tbsp oil to the skillet. Add the 2 minced garlic cloves and the 1 head broccoli cut into florets. Stir-fry for 3-4 minutes until bright green and crisp-tender.

Return the chicken to the skillet. Add the remaining 2 tbsp soy sauce and 2 tbsp water. Stir-fry for 1-2 minutes until the sauce coats everything and is slightly thickened.
