Ingredients
- ¼ cup chia seeds
- 1 cup milk (or plant-based milk)
- ½ cup plain yogurt
- 1 tbsp honey or maple syrup
- ½ cup strawberries
- ½ cup mango
- 2 tbsp rolled oats
Instructions
- 1
In a bowl, whisk together the 1/4 cup chia seeds, 1 cup milk, 1/2 cup yogurt, and 1 tbsp honey until well combined.
- 2
Let the mixture sit for 5 minutes, then stir again to break up any clumps. Cover and refrigerate for at least 2 hours or overnight, until thick and pudding-like.
- 3
When ready to serve, stir the pudding well. If it's too thick, add a splash of milk to loosen it.
- 4
Spoon the chia pudding into serving glasses or bowls.
- 5
Top with the 1/2 cup sliced strawberries and 1/2 cup diced mango.
- 6
Sprinkle the 2 tbsp rolled oats over the fruit for a little crunch. Serve chilled.
