Ingredients
- 8 large eggs
- ¾ cup shredded cheddar or mozzarella
- 2 cups fresh spinach
- 1 medium bell pepper (any color), diced
- ¼ medium red onion, thinly sliced
- 2 tbsp olive oil

Preheat broiler to high. Whisk eggs with 1/4 tsp salt and a few cracks of black pepper in a bowl.

Heat oil in a 10-inch nonstick or cast-iron skillet over medium. Add onion and bell pepper, cook 3 minutes until softened.

Toss in spinach and stir for 30 seconds until just wilted. Scatter cheese over the top.

Pour whisked eggs over vegetables. Don't stir. Cook on the stovetop for 2 minutes until edges start to set.
