Ingredients
- 1 lb shrimp, peeled and deveined
- 1 cup quick-cooking grits
- 1 cup cheddar cheese, shredded
- ½ cup black olives, sliced
- ¼ cup green onions, sliced
- 2 tbsp butter
- 1 tbsp olive oil
- ½ tsp salt

Bring 4 cups water and 1/2 tsp salt to a boil in a medium pot. Slowly whisk in 1 cup grits, reduce heat to low, and cook until thick and creamy, about 5-7 minutes.

Stir 2 tbsp butter and 1 cup shredded cheddar into the hot grits until melted and smooth. Cover and set aside.

Pat 1 lb shrimp dry with paper towels. Heat 1 tbsp olive oil in a large skillet over medium-high until shimmering.

Add the shrimp in a single layer and cook without stirring until pink on the bottom, about 2 minutes. Flip and cook until opaque and just firm, 1-2 more minutes.

Remove the skillet from heat and stir in 1/2 cup sliced black olives and 1/4 cup sliced green onions, reserving a few for garnish.

Divide the cheesy grits between 4 bowls. Top each with the shrimp mixture and sprinkle with the reserved green onions. Serve hot.
