Ingredients

  • 2 8-oz fillets chicken breast
  • ¾ cup salsa
  • ¾ cup shredded cheddar cheese
  • 2 ears corn on the cob
  • 2 cups mixed salad greens
  • 2 wedges lime wedge
  • 1 to taste salt and pepper

Instructions

    Pat chicken dry and season both sides generously with salt and pepper.

    Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

    Sear chicken 5 minutes per side without moving until golden, then remove to a plate.

    Return chicken to the skillet, pour salsa over it, sprinkle cheddar on top, and cover for 3 minutes until cheese melts.

    Meanwhile, char corn in a separate hot skillet or grill, turning occasionally, until edges blacken, about 8 minutes.

    Serve chicken with salsa-cheese sauce alongside corn, fresh greens, and a lime wedge.
