- 2 8-oz fillets chicken breast
- ¾ cup salsa
- ¾ cup shredded cheddar cheese
- 2 ears corn on the cob
- 2 cups mixed salad greens
- 2 wedges lime wedge
- 1 to taste salt and pepper

Pat chicken dry and season both sides generously with salt and pepper.

Heat oil in a large skillet over medium-high until it shimmers, about 90 seconds.

Sear chicken 5 minutes per side without moving until golden, then remove to a plate.
