Ingredients
- 1 head cauliflower
- 2 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1.5 cups milk
- 1.5 cups cheddar cheese

Preheat oven to 425°F. Cut the 1 head cauliflower into florets and toss with 2 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper on a baking sheet.

Roast for 25-30 minutes, until florets are tender and browned at the edges, shaking the pan halfway through.

While cauliflower roasts, melt 2 tbsp butter in a saucepan over medium heat. Whisk in 2 tbsp flour and cook for 1 minute until bubbly.

Gradually whisk in 1.5 cups milk. Cook, stirring constantly, until the sauce thickens and coats the back of a spoon, about 5 minutes.

Remove from heat and stir in 1.5 cups shredded cheddar until melted and smooth. Season with extra salt and pepper if you like.
