Ingredients

  • 4 slices bread slices
  • 8 oz mushrooms
  • 2 tbsp butter
  • 2 cloves garlic
  • 4 oz cheddar cheese
  • 2 tbsp parsley
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Slice the 8 oz mushrooms and mince the 2 garlic cloves. Finely chop the 2 tbsp parsley and shred the 4 oz cheddar.

  2. 2

Melt 1 tbsp butter in a skillet over medium-high heat. Add the sliced mushrooms and 0.5 tsp salt; cook until browned and tender, about 8 minutes.

  3. 3

Add the minced garlic and 0.25 tsp black pepper to the mushrooms; stir for 1 minute until fragrant. Remove from heat and stir in half the parsley.

  4. 4

Spread the remaining 1 tbsp butter on one side of each of the 4 bread slices. Place buttered side down on a baking sheet.

  5. 5

Divide the mushroom mixture evenly over the bread slices. Top each with the shredded cheddar.

  6. 6

Broil on high until the cheese is melted and bubbly and the bread edges are golden, about 3-4 minutes.

  7. 7

Sprinkle with the remaining parsley and serve hot.
