Ingredients

  • 8 oz hilopites (Greek square pasta)
  • 3 tbsp butter
  • ¾ cup feta cheese, crumbled
  • ½ cup Pecorino Romano, grated
  • 2 tbsp fresh dill, chopped
  • 1 whole lemon, zested and halved

Instructions

    Boil hilopites in salted water until al dente, about 8 minutes.

    Reserve 0.5 cup pasta water, then drain the pasta.

    In a large skillet over medium heat, melt butter until foaming.

    Add drained pasta, both cheeses, and 0.25 cup reserved pasta water. Toss until cheeses melt and coat the pasta, about 2 minutes.

    Fold in fresh dill. Add more pasta water if needed to loosen the sauce.

    Divide between bowls and squeeze fresh lemon over the top. Serve immediately.
