Ingredients
- 2 whole sweet potatoes, medium
- ½ lb ground beef
- 2 tbsp taco seasoning
- ¾ cup cheddar cheese, shredded

Poke each sweet potato all over with a fork, then microwave on high for 10 minutes until very soft.

While potatoes cook, brown ground beef in a skillet over medium-high heat, breaking it apart, until no pink remains, ~6 minutes.

Stir taco seasoning and 2 tablespoons water into beef, then simmer 2 minutes until fragrant.

Split each potato lengthwise, scoop out a shallow well, then divide seasoned beef between them.
