Ingredients

  • 1 lb ground beef
  • 1 medium yellow onion, diced
  • 2 cups potatoes, diced into 1/2-inch cubes
  • 4 cups beef broth
  • 2 cups sharp cheddar cheese, shredded
  • ½ cup heavy cream
  • 1 serving pita bread + hummus + Greek salad (prepared)

Instructions

    Brown ground beef in a large skillet over medium-high, breaking it up with a spoon, until no pink remains, ~5 minutes.

    Add diced onion and cook 2 minutes until fragrant, stirring often.

    Pour in broth and add diced potatoes. Bring to a boil, then reduce heat to medium-low and simmer 8 minutes until potatoes are tender.
