Ingredients
- 1 cup water
- 4 tbsp unsalted butter
- 1 cup all-purpose flour
- 3 large eggs
- 1 cup gruyere cheese
- ½ tsp salt
- ¼ tsp black pepper
- 1 cup tomato sauce

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

In a medium saucepan, combine 1 cup water, 4 tbsp butter, and 1/2 tsp salt. Bring to a boil over medium-high heat.

Add 1 cup flour all at once, stirring vigorously with a wooden spoon until the mixture forms a ball and pulls away from the sides, about 2 minutes.

Remove from heat and let cool for 2 minutes. Beat in 3 eggs one at a time, mixing until fully incorporated after each addition.

Stir in 1 cup grated gruyere and 1/4 tsp black pepper until well combined. The dough should be glossy and stiff.

Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them 2 inches apart.
