Ingredients
- 1 sheet puff pastry
- 1 cup shredded mozzarella
- 1 large egg
- ½ cup tomato sauce
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper

Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

Roll out the 1 sheet puff pastry on a lightly floured surface. Cut into 4 equal squares.

Place 1/4 cup shredded mozzarella in the center of each square. Fold diagonally to form triangles, pressing edges with a fork to seal.

Beat the 1 egg in a small bowl. Brush the tops of the pastries with the beaten egg.

Bake for 15-18 minutes, until puffed and deep golden brown.

While pastries bake, warm the 1/2 cup tomato sauce with 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp black pepper in a small saucepan over low heat, about 5 minutes.
