Ingredients
- 1.5 cups all-purpose flour
- ½ teaspoon instant yeast
- ½ cup warm water
- ½ teaspoon salt
- 1 cup feta cheese, crumbled
- ¼ cup fresh parsley, finely chopped
Instructions
- 1
Pour 0.5 cup warm water into a large bowl, then sprinkle 0.5 teaspoon instant yeast on top and wait 2 minutes until small bubbles form on the surface.
- 2
Add 1.5 cups flour and 0.5 teaspoon salt to the yeast mixture and stir with a wooden spoon until a shaggy, slightly sticky dough forms, about 1 minute.
- 3
Dust a clean counter lightly with flour, turn the dough out, and knead by pushing it away from you with the heel of your hand, folding it back over itself, and repeating for 5 minutes until the dough feels smooth and slightly elastic.
- 4
Shape the dough into a rough ball, place it in an oiled bowl, and cover with a damp kitchen towel; let it sit for 10 minutes until it rises slightly and feels puffy.
- 5
Set the oven to 450°F and wait until the indicator light or beep tells you it has finished heating, about 8 minutes.
- 6
Crumble 1 cup feta cheese into a small bowl, add 0.25 cup finely chopped fresh parsley, and stir together until evenly mixed.
- 7
Turn the dough out onto the counter (do not punch it down) and gently stretch it with your hands into a rough rectangle about 10 inches long and 5 inches wide.
- 8
Transfer the dough to a sheet pan lined with parchment paper, then press it gently with your fingertips until it covers most of the parchment.
- 9
Spread the cheese and parsley mixture down the center of the dough in a line, leaving a 1-inch border of plain dough on all sides.
- 10
Fold the long edges of the dough up and over the filling by about 1 inch, pinching and twisting the corners slightly to create a boat shape with exposed filling in the center.
- 11
Place the pan in the preheated 450°F oven and bake for 12–14 minutes until the dough is golden brown and the edges look crispy and lightly darker.
- 12
Remove the pan from the oven using oven mitts and let the pide cool on the pan for 2 minutes before slicing and serving.
