Ingredients

  • 1 lb beef sirloin or tenderloin, cut into 1-inch cubes
  • 3 tbsp niter kibbeh (spiced clarified butter) or butter mixed with garlic, ginger, and cayenne
  • 2 pieces injera or flatbread, torn into bite-sized pieces
  • ½ medium onion, diced small
  • 1 whole jalapeño or serrano pepper, minced
  • ¼ cup fresh cilantro and parsley, chopped
  • 1 tsp salt and pepper

Instructions

    Pat beef dry with paper towels. Season generously with salt and pepper.

    Tear injera or flatbread into bite-sized pieces. Set aside.

    Heat 1 tbsp niter kibbeh in a large skillet over medium-high until shimmering, ~90 seconds.

    Sear beef in batches 2 minutes per side without stirring. Don't overcrowd the pan; work in two batches if needed.

    Remove cooked beef to a plate. Lower heat to medium. Add remaining niter kibbeh to the pan.

    Add diced onion and jalapeño. Sauté 2 minutes until softened and fragrant.

    Return beef to pan with bread pieces. Toss gently 1–2 minutes until bread is warm and beef is coated.

    Remove from heat. Stir in fresh cilantro and parsley. Adjust salt and pepper to taste.

    Serve immediately in a shallow bowl or on a platter.
