Ingredients
- 1 lb beef sirloin or tenderloin, cut into 1-inch cubes
- 3 tbsp niter kibbeh (spiced clarified butter) or butter mixed with garlic, ginger, and cayenne
- 2 pieces injera or flatbread, torn into bite-sized pieces
- ½ medium onion, diced small
- 1 whole jalapeño or serrano pepper, minced
- ¼ cup fresh cilantro and parsley, chopped
- 1 tsp salt and pepper

Pat beef dry with paper towels. Season generously with salt and pepper.

Tear injera or flatbread into bite-sized pieces. Set aside.

Heat 1 tbsp niter kibbeh in a large skillet over medium-high until shimmering, ~90 seconds.

Sear beef in batches 2 minutes per side without stirring. Don't overcrowd the pan; work in two batches if needed.

Remove cooked beef to a plate. Lower heat to medium. Add remaining niter kibbeh to the pan.

Add diced onion and jalapeño. Sauté 2 minutes until softened and fragrant.

Return beef to pan with bread pieces. Toss gently 1–2 minutes until bread is warm and beef is coated.
