Ingredients

  • 8 sheets phyllo dough
  • 8 oz feta cheese
  • 1 cup ricotta cheese
  • 1 large egg
  • 4 tbsp butter
  • ½ tsp salt
  • ¼ tsp black pepper

Instructions

  1. 1

Preheat oven to 375°F. In a bowl, crumble 8 oz feta and mix with 1 cup ricotta, 1 egg, 1/2 tsp salt, and 1/4 tsp pepper until well combined.

  2. 2

Melt 4 tbsp butter. Lay 1 sheet of phyllo on a clean surface and brush lightly with melted butter. Top with another sheet and brush again. Repeat until you have a stack of 4 sheets.

  3. 3

Spread half of the cheese mixture evenly over the phyllo stack, leaving a 1-inch border. Fold the long edges inward slightly to enclose the filling.

  4. 4

Starting from one short end, roll the phyllo into a tight log. Gently coil the log into a spiral shape and place on a parchment-lined baking sheet.

  5. 5

Repeat steps 2-4 with the remaining 4 phyllo sheets and cheese mixture to make a second spiral. Brush the tops of both spirals with any remaining melted butter.

  6. 6

Bake for 25-30 minutes, until the pastry is deep golden brown and crisp to the touch. Let cool for 5 minutes before serving warm.

  7. 7

Slice the spirals into wedges and serve. They are best enjoyed fresh from the oven.
