- 8 oz feta cheese
- 1 cup ricotta cheese
- 1 large egg
- 4 tbsp butter
- ½ tsp salt
- ¼ tsp black pepper

Preheat oven to 375°F. In a bowl, crumble 8 oz feta and mix with 1 cup ricotta, 1 egg, 1/2 tsp salt, and 1/4 tsp pepper until well combined.

Melt 4 tbsp butter. Lay 1 sheet of phyllo on a clean surface and brush lightly with melted butter. Top with another sheet and brush again. Repeat until you have a stack of 4 sheets.

Spread half of the cheese mixture evenly over the phyllo stack, leaving a 1-inch border. Fold the long edges inward slightly to enclose the filling.

Starting from one short end, roll the phyllo into a tight log. Gently coil the log into a spiral shape and place on a parchment-lined baking sheet.

Repeat steps 2-4 with the remaining 4 phyllo sheets and cheese mixture to make a second spiral. Brush the tops of both spirals with any remaining melted butter.
