Ingredients
- ½ cup all-purpose flour
- ¾ cup milk
- 1 large egg
- 2 tbsp butter
- ½ cup shredded cheese (e.g., cheddar or mozzarella)
- 2 tbsp fried onions

In a medium bowl, whisk together the 1/2 cup flour, 3/4 cup milk, and 1 egg until smooth. The batter should be thin and pourable, about the consistency of heavy cream.

Melt 1 tbsp of the butter in a nonstick skillet over medium heat. Pour in half the batter, tilting the pan to spread it thinly. Cook until the edges are golden and the top is set, about 2 minutes.

Flip the crepe and sprinkle 1/4 cup of the shredded cheese over one half. Cook until the cheese melts, about 1 minute. Fold the crepe in half, then in half again to form a triangle.

Transfer the crepe to a plate. Repeat with the remaining batter and cheese, adding the remaining 1 tbsp butter to the pan as needed.
