Ingredients
- 1.25 lb boneless, skinless chicken thighs
- 3 tbsp gochujang (Korean red chili paste)
- 3 tbsp butter
- 1.5 tbsp soy sauce
- ¾ cup mozzarella cheese, shredded
- 3 clove garlic, minced
- 2 tbsp green onion, sliced

Pat chicken dry and season with salt and pepper on both sides.

Heat 1 tbsp oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

Sear chicken 4 minutes per side without moving until golden brown. Transfer to a plate.

In the same skillet, melt butter over medium. Add garlic and cook 30 seconds until fragrant.

Whisk in gochujang and soy sauce until smooth. Return chicken to the pan, coat in sauce.

Sprinkle cheese over chicken and broil 3 minutes until bubbly and edges char slightly.
