Ingredients

  • 4 pieces boneless, skinless chicken thighs
  • 3 tbsp gochujang (Korean red chili paste)
  • 1 tbsp honey
  • 1 cup mozzarella cheese, shredded
  • 1 tbsp soy sauce
  • 2 stalks scallions, chopped
  • 1 tsp sesame seeds

Instructions

    Pat chicken thighs dry with paper towels. Season with salt and pepper on both sides.

    Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

    Place chicken skin-side down in the pan. Sear 6 minutes without moving until edges brown.

    Flip chicken. Mix gochujang, honey, and soy sauce in a bowl, then brush generously over the meat.

    Cook 5 minutes, then scatter mozzarella evenly over the chicken. Cover and cook until cheese melts, ~3 minutes.

    Slide onto a plate. Sprinkle with scallions and sesame seeds. Serve immediately.
