Ingredients
- 4 pieces boneless, skinless chicken thighs
- 3 tbsp gochujang (Korean red chili paste)
- 1 tbsp honey
- 1 cup mozzarella cheese, shredded
- 1 tbsp soy sauce
- 2 stalks scallions, chopped
- 1 tsp sesame seeds

Pat chicken thighs dry with paper towels. Season with salt and pepper on both sides.

Heat oil in a 12-inch skillet over medium-high until it shimmers, about 90 seconds.

Place chicken skin-side down in the pan. Sear 6 minutes without moving until edges brown.

Flip chicken. Mix gochujang, honey, and soy sauce in a bowl, then brush generously over the meat.
