Ingredients
- 2 cups tapioca flour
- ½ cup milk
- 3 tbsp butter
- 1 large egg
- ½ cup grated parmesan cheese
- ½ tsp salt
- ½ cup dulce de leche

Preheat oven to 375°F. In a small saucepan, heat 0.5 cup milk and 3 tbsp butter over medium until butter melts and mixture is hot, about 3 minutes.

In a large bowl, combine 2 cups tapioca flour and 0.5 tsp salt. Pour in the hot milk mixture and stir with a wooden spoon until a shaggy dough forms, about 2 minutes.

Add 1 large egg and 0.5 cup grated parmesan cheese. Mix until dough is smooth and slightly sticky, about 3 minutes. Let cool until easy to handle, about 5 minutes.

With wet hands, take about 2 tbsp of dough, flatten into a disc, and place 1 tsp dulce de leche in the center. Fold dough over and roll into a ball, sealing the filling inside. Repeat with remaining dough and filling.

Place balls on a baking sheet lined with parchment paper, spacing them 2 inches apart. Bake until puffed and golden brown, about 20 minutes. Serve warm so the dulce de leche is gooey.
