Ingredients
- 1 cup pre-cooked white cornmeal (masarepa)
- 1 cup warm water
- ½ teaspoon salt
- ½ cup shredded mozzarella or queso fresco
- 1 avocado
- ¼ cup salsa

In a bowl, mix 1 cup cornmeal, 1 cup warm water, and 1/2 tsp salt until a soft dough forms. If too sticky, add a little more cornmeal; if too dry, add water.

Divide dough into 4 balls. Flatten each into a 1/2-inch thick disc. Press a small well in the center and fill with 2 tbsp cheese, then seal and flatten again.

Heat a lightly oiled skillet over medium. Cook arepas until golden and crisp, about 5 minutes per side. They should sound hollow when tapped.

Serve warm with sliced avocado and salsa on the side, plus a squeeze of lemon if you like.
