Ingredients

  • 6 sheets pre-made chee cheong fun (rice roll sheets)
  • 8 oz large shrimp, peeled and deveined
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp granulated sugar
  • 3 stalks scallions, white and light green parts, sliced thin
  • 2 tbsp neutral cooking oil

Instructions

    Whisk soy sauce, sesame oil, and sugar in a small bowl until sugar dissolves.

    Heat neutral oil in a 12-inch skillet over medium-high until shimmering, about 90 seconds.

    Add shrimp to the skillet and cook, stirring occasionally, until pink and cooked through, 3–4 minutes.

    Gently add rice roll sheets and fold them into the shrimp without breaking, 2 minutes.

    Pour the soy glaze over everything and toss gently until coated, coating should look glossy.

    Slide onto a plate, top with sliced scallions, and serve immediately.
