Crispy Shrimp Soba

Ingredients
- 6 oz soba noodles
- 10 oz large shrimp, peeled and deveined
- ½ cup panko breadcrumbs
- 3 cups dashi broth (or instant dashi mixed with water)
- 2 tbsp soy sauce
- 2 whole large eggs
- 1 stalk scallion, thinly sliced

Bring dashi and soy sauce to a simmer in a large pot over medium-high heat.

Pat shrimp dry. Toss with salt, pepper, then coat in panko. Heat oil in a skillet over medium-high until shimmering.

Sear panko shrimp 90 seconds per side until edges turn golden. Transfer to a plate.

Add soba to the simmering broth, stir gently, and boil 3–4 minutes until tender.

Crack both eggs into the broth at opposite ends. Let whites set but yolks stay runny, about 2 minutes.

Pour noodles and broth into two bowls. Top each with shrimp, one egg, and scallion. Serve hot.
