Ingredients
- 1.5 lb beef short ribs (2–3 inches thick)
- 5 cloves garlic cloves, minced
- 2 limes limes (juiced)
- 3 tbsp butter
- ½ cup beef broth
- 1 tsp smoked paprika
- 1 leaf bay leaf

Pat ribs completely dry with paper towels. Season generously with salt and pepper.

Heat a heavy skillet over medium-high heat until very hot, ~2 minutes. Oil surface should shimmer.

Sear ribs bone-side down without moving for 2 minutes until deeply browned. Flip and sear meat side 2 minutes.

Push ribs to the side. Add garlic, paprika, and bay leaf to the empty space. Toast for 30 seconds until fragrant.

Pour broth and lime juice around the ribs. Add butter. Reduce heat to medium and cover with a lid.

Braise for 10 minutes, turning ribs once halfway through, until meat is tender and glaze coats the surface.

Uncover and simmer 2 minutes until sauce thickens slightly. Serve ribs with pan glaze spooned over top.
