Ingredients
- 2 pounds potatoes
- 4 whole scallions
- ¾ cup milk
- 4 tablespoons butter
- 1 teaspoon salt

Peel and quarter the 2 lb potatoes. Place in a large pot, cover with cold water, and add 1 tsp salt. Bring to a boil over high heat, then reduce to medium and simmer until fork-tender, about 15-20 minutes.

While potatoes cook, thinly slice the 4 scallions (white and green parts). In a small saucepan, warm the 3/4 cup milk and 2 tbsp butter over low heat until the butter melts; do not boil.

Drain the potatoes well and return to the pot. Mash until smooth, then pour in the warm milk-butter mixture and the sliced scallions. Stir vigorously until fluffy and well combined.

Season with additional salt to taste. Spoon the champ into bowls and top each with a pat of the remaining 2 tbsp butter. Serve hot.
