Ingredients

  • 2 lbs russet potatoes, peeled and cut into 1-inch cubes
  • 1 cup whole milk or half-and-half
  • 4 tbsp butter
  • 6 count scallions, white and light green parts sliced thin
  • ¾ tsp salt
  • ¼ tsp black pepper

Instructions

    Boil potatoes in salted water until fork-tender, about 12 minutes. Drain well.

    Heat milk and butter in the empty pot over medium heat until steaming, 2 minutes.

    Return potatoes to the pot and mash until mostly smooth (leave a few lumps for texture).

    Fold in scallions, salt, and pepper until combined and creamy.

    Serve hot in bowls, top with an extra knob of butter if desired.
