- 2 lbs russet potatoes, peeled and cut into 1-inch cubes
- 1 cup whole milk or half-and-half
- 4 tbsp butter
- 6 count scallions, white and light green parts sliced thin
- ¾ tsp salt
- ¼ tsp black pepper
