Ingredients

  • 2 lbs potatoes, russet or Yukon gold
  • 4 tbsp butter
  • ½ cup heavy cream
  • 1 tsp salt
  • ¼ tsp black pepper

Instructions

    Cut potatoes into 2-inch chunks. Place in a pot, cover with cold salted water.

    Bring to a boil over high heat. Reduce to medium and simmer until potatoes are fork-tender, 10–12 minutes.

    Drain potatoes in a colander. Return to the pot.

    Add butter and cream. Mash until smooth, leaving texture slightly fluffy.

    Season with salt and pepper. Taste and adjust. Serve hot.
